Chef Corner : recipe for warm rice pudding

Warm Rice Pudding, with local honey & meringue.

Serves 4

Ingredients

50g pearl rice

450g full fat milk

150 g cream

1 vanilla pod

25g sugar or honey (to taste)

 

Method

  1. Cut the vanilla pod lengthways, scrape the seeds from the pod and add both to a large saucepan with the rice, milk, cream and sugar or honey.
  2. Place the saucepan on a high heat and bring all ingredients to the boil, then reduce the heat to simmer.
  3. Allow the ingredients to simmer gently for approximately 40 minutes, stirring regularly until the rice has absorbed most of the liquid and has a rich creamy texture.
  4. Serve with a drizzle of local honey, mini meringues and a scoop of vanilla ice cream.
